What pancakes are to Shrove Tuesday aka Pancake Tuesday in Ireland, are Laskiaispulla in Finland. Laskiaispulla is the Finns favourite pasty Pulla cut in half and stuffed with strawberry or raspberry jam and whipped cream or almond paste and whipped cream.
In the olden days, Laskiainen (Shrove Tuesday) used to be a peasant holiday on which kids would play with their pulka (a sami sledge) and people were eating lots of foods high in fat and sugar before Lent was coming.
Nowadays, young and old kids still go sledging on this day and devour many of the Laskiainenpulla before, while or after the fun outing in the cold Finnish winter weather.
By the way, similar buns also are very popular in other Scandinavian countries – semla (Sweden), fastelavnsbolle (Norway & Denmark), bolla (Iceland) and føstulávintsbolli (Faroe Islands).

For the dough
Prepare Pulla dough – you find the recipe here and follow the baking instructions
To decorate
5 dl heavy cream
strawberry/raspberry jam or almond paste (marzipan)
powdered sugar

Prepare your whipped cream.
Once the pullas are cool, cut a lid off and remove some of the inside with a spoon. Fill the hole with jam or almond paste and pipe the whipped cream in a circle around the jam. Add the lid and slightly cover it with some powdered sugar.

Tipp:
– if the almond paste is too thick, stretch it with some whole milk or heavy cream.
