Joulu Riisipuuro – Christmas Rice Porridge

A little Christmas tradition

Jonas and I have been thinking about which traditions do we want to implement into our lives and even more so since we became a family of three. As with most parts in our lives we are very much influenced by the nordic way of life and so when it comes to Christmas we decided to introduce some traditions that we experienced while living in Denmark respectively Finland.

In most nordic countries, rice porridge is eaten on or around Christmas, mostly warm with a topping of sugar and cinnamon or even a generous knob of butter. Some also hide an almond in it and whoever finds it in Denmark, Iceland, Norway ans Southern Sweden receives a gift, often a candy, but those who find it in Sweden or Finland it is said that they will get married the next year.

Christmas Eve is the day when we celebrate in our little family, since we spend Christmas Day and Stephen’s Day with our families, and what better way to start into the festivities than with a soulful bowl of rice porridge!

Riisipuuro

serves 4 people

180 g short-grain rice
pinch of salt
400 ml water
800 ml milk
cinnamon stick(s), optional
1 almond, optional

The ingredients

Put the rice and salt in a pot and the water, bring it to a boil on a medium heat while stirring. Once it is boiling, lower the heat and add the milk and cinnamon (if using). Let it simmer for around 35 mins or until soft, only stirring now and then since you don’t want to mush the rice.

Tip:
– if the porridge becomes too thick before the rice is cooked, add more milk until desired consistency.
